Pizza at Kate + Nate’s

We had plans to hang out with some friends tonight and were in charge of bringing a Caesar salad.

We got all the groceries for the salad last night at Earthfare – Drew’s Caesar dressing, parmigiano reggiano, romaine lettuce, and Chatham Village Caesar Traditional Cut Croutons. I wasn’t sure if people would want the salad pre-mixed like they do at restaurants, so I did one bowl with all the ingredients mixed together and one bowl with plain lettuce and got the other ingredients packed up to take with us.

We went over to Kate + Nate’s tonight for pizza and planned to see Slumdog Millionaire as a group after the food festivities. We never made it to the movie, but we did have a blast hanging out with friends.

Of course, there was plenty of pizza.

But we had lots of healthy options, too. We had both of my salads – the plan and pre-prepared (I think I went a little overkill with the salads)…

…and Kath’s spinach salad. You can’t quite see at first glance, but besides the obvious yummy spinach and cherry tomoatoes, the salad also had dried cranberries, walnuts, and cheese…not sure what kind…maybe feta? Either way…yum!

I had a glass of red wine, a piece of chicken artichoke pizza and 2 nice portions of the salads to start.

The salad really helped fill me up. I only went back for 1 more piece of pizza (cheese), though I usually eat around 3. It’s a lot, but I love pizza!

We ate in a large circle with a nice fire going in the background.

A view of the kitchen/food area. I love the red pops of color in the lampshade and flowers (though the flowers may actually be “orange” – still like the color, though).

Michelle brought dessert – a yummy banana cream pudding. I liked how she used the Pepperidge Farm Chessmen cookies.

I had a nice-sized portion along with 3 fresh strawberries. What a sweet way to end the meal – dessert was delish!

A Little Shopping

I’m still looking for advice on healthy books & magazines (see post here for details), but I figured I’d show you what I got so far (except one “surprise” book, which I’ll share tomorrow).

I don’t know why I didn’t just post it with last night’s post on Barnes & Nobles, but here’s what I brought home with me last night:

Yea…I bought the magazine with Ellie Krieger on the front. You knew I would! :) This is Experience Life magazine. I want to check out a couple magazines for myself before committing to a subscription. I had planned to get only 1 magazine and 1 book, but there were so many options, I decided to get 2 magazines for now.

I also went with another trusty fave of mine – the Martha Stewart magazine – whole living – body + soul. I seem to love almost anything Martha does.

For my book, I got The 150 Healthiest Foods on Earth by Jonny Bowden, Ph.D., C.N.S. This book seems to have exactly what I’m currently interested in learning about – food nutrition info. I’d like to know more about what foods are good for what things, high in what vitamins & nutrients, and what not. For one of the first times in my life, I want to be healthier, but I don’t want to go on a diet. I don’t want to learn what I can’t eat…I want to learn what I should eat. I’m also planning to use foods from this book for my Weekly Food Challenge!

While I’m talking about shopping, lookie what I found on sale at Target – a soup tureen! I was actually looking for a journal at Target and stumbled upon this at the end of the office aisle.

I don’t really have anywhere to put a soup tureen, but at this price, I couldn’t leave it there. Can you believe this deal?!

Welcome Wake-Up

I don’t know what’s up with my sleep schedule lately, except that I don’t really have one. I remember a time when my body clock was set to wake up at 7am and I could wake up at 7am every day without an alarm clock. Although I’ve been really into having a flexible schedule lately, I miss those days. I’d like to work on establishing a regular wake-up/sleep time.

What time do you go to bed and wake up?

I went to bed last night around midnight and woke up at about 8:30am. I took the dog out and when I got back in, guess what was on TV? A hip hop work out class on FitTV! I love dance workouts and the timing seemed perfect since the show had literally just flipped on, so I decided to go for the class – in PJ’s and everything! I’ve been so unmotivated lately with working out that it felt good to finally do something active.

I was so proud of myself that I decided to treat myself with something I’ve been wanting to try for awhile now – steel cut oats. I got some of Bob’s Red Mill Steel Cut Oats last week.

I figured the steel cut oats would be a bit of a treat for me since time is so short during the work week mornings.

They were good, but I’m not sure I like them more than regular Quaker Old-Fashioned Oats. I cooked mine according to the package instructions, stirred 2 tbsp 2% milk and 1 tsp sugar into the oats, and topped everything with about 1 tsp mini semi-sweet chocolate chips, 1 tsp pumpkin seeds, 1 tsp sunflower seeds, and a sprinkling of flax seed. I also add a spoon of organic PB on the side.

Served with a nice mug of hot, sweet, creamy coffee – perfection!

My friend, Dana, was coming over for lunch and I expected her at 1:30pm, so I relaxed a bit and watched a DVR’ed Heathy Appetite with Ellie Krieger. My slow pace quickly changed when I realized I had a text from Dana asking if she could swing by at 12:30 instead. It was 11:45am when I got that text. I had plans to go to the grocery store still, but now I had to throw together something from the pantry. I didn’t have any meat around, so I decided to make a veggie soup using pantry ingredients.

I used to make up soups all the time when I was a kid. They were my favorite thing to cook because they were so versatile and I could just raid my mom’s pantry and spice rack for all the ingredients.

Luckily, I had lots of good veggies on hand at the apartment – half an onion leftover from last night’s hash dinner, some celery, and some baby carrots. I also had some red potatoes and parsnips, so those got chopped up, too – you can hardly tell the difference between those two.

The soup worked up quickly, but had to simmer for awhile, so Dana and I hit up Target for a quick trip to look for bowls for my salad I’m making for later tonight.

I served the soup with a little parmesan and a slice of Great Harvest Dakota bread toasted with butter (and water). The soup was great! It was nice light and healthy and made lots so I’ll be able to freeze to enjoy later.

Luckily, the table still looked pretty with decorations from hubby’s b-day dinner, although some of the daisies did look a bit wilted. I still liked the colors, though. :)

All in all, the soup and decor made for a great, easy lunch so we could catch up. Fun times!

Pantry Vegetable Soup

My Notes: Use whatever veggies you have on hand – fresh, frozen, and canned.

Ingredients:

  • Half medium onion, chopped
  • 2 stalks celery, chopped
  • 1 cup baby carrots, chopped
  • 2 cloves garlic, chopped
  • 1 red potato
  • 2 small parsnips
  • 1 box (32 ounces) beef stock (or any flavor stock)
  • 1 can chicken broth (or any flavor broth)
  • 1 can of water (i.e. fill up broth can with water)
  • 1 (14 1/2 ounce) diced tomatoes with juices
  • 1 can cannellini beans, drained, rinsed
  • 1 cup frozen peas
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 tsp herbes de provence
  • 1 bay leaf
  • Grated/shredded parmesan, optional

Directions:

Heat large pot to medium heat. Add olive oil to pot. Add carrots, onion, celery to pot and saute till onions translucent (about 5 minutes). Add can of tomatoes, box of beef broth, can of chicken broth, can of water, potato, parsnips, salt, pepper, herbes de provence, and bay leaf and bring pot to a boil. Cover, reduce heat to medium low and simmer for 30 minutes. Add cannellini beans. Recover and simmer for 15 minutes more. Add peas. Turn heat off and let sit for a couple minutes so peas can warm through.

Serve in individual bowls and top with 1 tsp of parmesan with nice crusty bread.

Winding Down for the Weekend

Quick Note: I have a reader question for you guys and your expertise – scroll to the end of this post if you don't feel like reading the whole thing to get to it.

Does it ever feel like your weeks are longer than normal? By the time I got home tonight, I was thankful that I had a super easy meal planned.

After cooking all those potatoes, yams, sweet potatoes, and parsnips Wednesday night, I was left wondering, What the heck am I going to do with all these leftover roasted root vegetables? The only thing that kept popping up in my mind was hash. I figured I could make a hash like one of those breakfast-type items.

I'd like to start cooking things on the fly instead of constantly depending on recipes and so far, so good. This is my second recipe this week! I'm hoping that all the practice I've had with various recipes has taught me something useful I can apply through my own, intuitive cooking. I think I made up more recipes when I was a kid than I do now! lol

I re-heated my roasted root veggies in an oven-proof saute pan with half an onion, then put the pan in the oven to finish warming everything through.

While the veggies were in the oven, I got the eggs cooking. I tried to make them over-easy, but one of the yolks ending up breaking. Oopsie!

The hash made for a simple dinner for my I'm-exhausted-from-the-work-week mood.

It was pretty light, too (not sure how healthy, but it was def not too-filling). Dinner was definitely light on the pocket and a nice way to use up leftovers! The only thing that was missing was a fruit/veggie serving, but I'm working on not forcing every meal to have "all the courses." I did have a banana earlier today and I have been eating a ton of blueberries this week. :)

Leftover Roasted Root Vegetable Hash (serves 2)

My Notes: I think this would have tasted better with a couple more ingredients – maybe garlic and chopped green/red pepper?

Ingredients:

  • 3 cups leftover roasted root vegetables (or however much you have)
  • 1/2 medium onion, chopped
  • 2 eggs
  • 2 tbsp butter
  • salt, pepper

Directions:

Pre-heat oven to 300 degrees F. Heat an oven-proof saute pan over medium heat. Melt 1 tbsp butter in pan. Add onion and root vegetables. Season lightly with salt and pepper (about 1/4 tsp each). Saute, turning frequently, so vegetables don't stick to pan, for about 5-7 minutes. Place saute pan in oven to allow vegetables to heat through.

Meanwhile, heat a non-stick skillet over medium-low heat. Melt 1 tbsp butter (or use non-stick cooking spray) in pan. Crack and drop eggs into pan side by side. Once bottom of each egg is opaque and firm, flip gently with spatula. Cook to desired doneness of yolk.

When eggs are done, carefully (it's hot!) remove pan from oven and serve vegetables in 2 plates/low bowls. Top vegetables with fried egg.

Post Dinner

After dinner, hubby and I headed out to run some quick errands. We first hit up the mall so he could exchange a Brooks Brother's shirt for a sweater. We also browsed J Crew and Anthropologie, but I didn't get anything! Pretty good for a shopaholic like me. Especially with all those deals!

Next, we hit up Earthfare to grab some goodies for a big Caesar salad for dinner with friends tomorrow night.

Finally, we went to Barnes & Nobles – the store that inspired our night out. Since I'm on my I'm-going-to-get-healthy-this-year kick, I'm hoping to get more inspiration around me. I think if you surround yourself with things that inspire you (so long as you don't get out of control and clutter your place up) they will help you move your life in the direction you want to go. I'm currently researching "healthy" magazines because I'm interested in subscribing to one. I'm going to get a few one-offs first so I can read them and see how I like them. I found one magazine with Ellie on the cover! :)

I'm also really interested in learning more about foods – what kinds of vitamins and nutrients they contain, if/why they're healthy, how they help your body, etc. My dad knows all these things already. I used to be able to just ask him, but I see now I'm going to have (and I really want!) to learn about them for myself (since we live so far apart).
