It’s a Beautiful Morning

What a difference a day makes, no? Remember yesterday?

I stayed up waaaaay too late last night…like till about 1:30am, so I was extremely groggy this morning (and most of the day). As usual, I didn’t have time to eat breakfast at home, but I did pack up some oatmeal goodies to heat something up at work. I consolidated my tupperwares to a mere 3 (last time I used 5).

  • In the round container – 1/4 cup quick-cooking oats (about a 1tbsp was old-fashioned since I ran out of the QC stuff this AM), 1 tsp flax seed, 1 tsp pumpkin seed, 1 tsp sunflower seed (seed measurements are guestimates)
  • In the pink-lid container – about 3 tbsp 2% milk, 1 tsp brown sugar, 1 tsp maple syrup
  • In the turquoise-lid container – 1/2 water, 1 tbsp canned pumpkin

I added the contents of the turquoise-lid container to the round one and microwaved for 1 1/2 minutes. Then, I stirred the contents of the pink lid container into the cooked oats. I found out that the problem with putting ingredients in containers prior to cooking, when you don’t measure, is that you may end up with a soupy mixture like what I had today. I like my oatmeal creamy, not soupy! lol. Still, it tasted pretty darn good.

I had lunch with a friend and was too embarrassed to take photos of my food in front of them. I had a Greek chicken plate which was a gigantic load of food. I ate most of the salad, some of the rice, and all of the chicken. I always go for the meat first if I can’t finish my food and I don’t think it’s worth taking home.

For a post-lunch snack, I had a Wallaby yogurt in Blueberry

…and a small handful of Tahitian Gold – my fave dried fruit & nut mix. Yum!
