Scallops…Encore

Hubby and I didn’t give up on those weird looking scallops from the other day. I mean, we gave up on those scallops, but not on scallops completely. Hubby and I went back to The Fresh Market and exchanged those strange scallops for new ones.

I decided to re-heat some of that leftover tomato risotto, so I could re-create my original idea.

I’ve only ever cooked scallops a handful of times, so I’m always a little cautious preparing them.

I heated up some frozen green peas for our veggie side.

  1. I agree – the simplicity of this meal is what makes it terrific. Those scallops are very tasty. I wish I could just grab them off the monitor and try one.
