Eatiful Sunday – New Vegetarian Fave

Last week was loooong and I stayed up too late last night, but luckily, hubby let me sleep in. By the time I woke up, hubby had picked up his brother who is visiting overnight for a fantasy football draft.

I decided to cook up a most-awesome breakfast, but the pancake-cooking ended up taking almost an hour due to the lack of griddle in our house. I had to use an iddy-biddy 8″ non-stick pan. Totally ridiculous!

We’ve been putting off buying multiple things because of the ole “let’s wait till we have a house” excuse. This excuse has caused me more frustration over the last couple years, but hopefully, we won’t have to deal with it any more in the next month of so if things work out ok with the house.

The rest of the day was pretty uneventful and relaxing.

Hubby’s brother, Ted, took me out to dinner at a local Mediterranean restaurant.

He got the special – beef and rice stuffed zucchini with a homemade tomato sauce.

I got something that I may now be addicted to – the veggie platter! On this plate: falafel, spinach pie, baba ga..?, potatoes harra, stuffed grapeleaf, tabbouleh, and hummus. So delish!

I even got a pistachio baklava for dessert…it was sooo delish! I think the photo came out pretty nice, too…especially considering the low lighting!

Dinner was so fab, I very well may have to hit them up again some time this week to get a fix…I can’t believe a couple years ago I would have skipped over this meal because it was vegetarian. I’m so glad that even though I’m not a “vegetarian”, I know I can eat and ENJOY vegetarian meals. Yum!

Organicfest 2009

Just found out about Organicfest 2009 , hosted by Navitas Naturals , in Asheville, NC on Sunday, September 13, 2009 from 10am-6pm. Anyone going? I totally want some of those butterfly wings I keep seeing in the albums!
