(Zucchini + Bacon) x 2

I’m still thinking about all the things I want to do on my mini vacay coming up this weekend. I forgot to mention yesterday, but I loved all your feedback on my post the other day.

Here are some of your favorite things to do on vacays (the non-sight-seeing-type):

  • Read magazines (surprisingly, I don’t have much time to do this and don’t always actually read the magazines I subscribe to)
  • Take crochet or knitting
  • Sudoku
  • Crosswords (I used to do these all the time…I should do them more often!)

Do you have things to add to this list? Leave em here (click) or just view the stuff I’m currently brainstorming – I’d love some more ideas, though!

I was actually really swamped with work this morning, but lucky me – hubby cooked up a quick breakfast.

IMG_6928.jpg

Fried, local, cage-free egg, bacon, my last 2 homemade zucchini muffins (*sniff* :( )

Ya’ll, I MUST make these muffins (or bread) again soon. It’s sooo good!

IMG_6939.jpg

I also enjoyed some organic cherries – scored these on sale the other day.

IMG_6941.jpg

Lunch was freakin fabulous!

IMG_6946.jpg

Pom Wonderful (*) + pellagrino (wish I had some lime!)

IMG_6949.jpg

Avocado and corn salad with tomatoes and parsley from my garden.

IMG_6943.jpg

And a delicious club sandwich with a slice of tomato from my mom’s garden – on 9 Grain bread from Great Harvest.

This meant bacon twice in one day…whoa! I think How Sweet It Is would be proud. :)

Special delivery!

IMG_6953.jpg

We taught Bailey to bring us the mail. Awww!

Cooking Light’s Zucchini bread for a snack. I seriously can’t stop eating this stuff. You probably thought I was kidding till I posted all the photos over the last couple days as proof.

This meant zucchini bread x 2 today!

So that’s….

bacon x 2

and zucchini bread x 2

That’s like (zucchini + bacon) x 2…right, math people? Any math geeks out there? It’s ok, I’m one, too. You’re safe here! :) lol

I spotted a bunny in our yard today.

Ok, I see them almost every day. I haven’t figured out how many there are yet but one is definitely WAY bigger than the other (one…or two…or…however many there are).

I had Zumba after work! Something really, REALLY cool happened tonight. Two ladies from my first-ever-solo-zumba class came to the class I went to tonight! They were seemed really happy to see me and I was definitely happy to see them. They did so wonderful tonight too! We did some of the same songs I did in my demo and you could tell them remembered a lot of the moves. Nice work ladies! :)

I’m not always the fastest to get ready, but tonight I really impressed myself. I left class at 7:30pm and made it to a local restaurant, Cantina 1511, for a friend’s birthday dinner. That’s 30 minutes to drive home, shower, wash my hair, put on a dress and jewelry and drive to the restaurant. Phew!

IMG_3606.jpg

I snacked on tortilla chips, guacamole, and queso (over a piece of soft, flour tortilla) pre-dinner.

IMG_3608.jpg

My main entree, I got a chicken taco on soft corn tortillas with a bit of tortilla slaw and rice and beans on the side. It was nearly the perfect size! I finished almost all of it except for some of the rice.

The birthday girl, Megan, got a tres leches cake for her dessert, which she kindly shared with us.

IMG_3616.jpg

I had a large bite. Nommm! I adore this dessert here and it’s available at a couple sister restaurants to this place.

Happy Birthday Megan!!!

And I don’t know why but I’m currently enjoying a mini, individual blueberry crisp. It’s way too late to be eating this, but…well…I did it. Oh well.

IMG_6980.jpg

It’s actually way smaller than the portion I make for breakfast – maybe half?

100% delicious though. ;)

IMG_6981.jpg

And besides my morning cup of water, here’s one of my favorite ways to hydrate – a nice night-cap mug of tea. I’m currently enjoying a tea made specifically to be consumed before bedtime. It’s called Get Some Zzzs!

Time for me to get some zzzssssss…G’night!

Zucchini Muffins for Dinner

I had to leave work early for a dentist appointment.

IMG_6900.jpg

I stopped by home first…and snacked on another piece of homemade zucchini bread. I love the pretty little specks of green!

You know what else is green that is often made sweet? SPINACH! I think I need to develop a recipe for Spinach muffins! I need to get on that one. :)

Luckily I had no cavities! Hazzah!

IMG_3579.jpg

I had two, that’s right TWO, fabulous hours of zumba tonight! It’s been awhile since I’ve done 2 hours back to back of zumba, but I pushed my way through whenever I started to feel tired.

IMG_3576.jpg

I had a Chocolate Coconut Chew Larabar for a post-workout snack. It only had 5g of protein, so wasn’t really the best choice, but I figured it was better than nothing?

Post class, after 2 hours of exercise, I was RAVENOUS!

Someone said something about Chick Fil A in class and for the first time in a long time, that sounded really good. I considered picking up some fast food and getting french fries, but then I remembered that I had HOMEMADE zucchini muffins waiting to be eaten at home. The thought of homemade food won out over the idea of fast food. I’m finally starting to get to the point where I think that I can cook better food at home than most restaurants. Not so much that my cooking is better than a 5 star restaurant (let’s be reasonable!) but that I can control what I eat, how healthy it is and how customized the eats are to me and hubby.

IMG_6903.jpg

I decided to make use of what I had on hand – a mini bell pepper from the farmers market and cherry tomatoes from my own garden. Dinner’s theme = breakfast for dinner.

IMG_6905.jpg

IMG_6906.jpg

I did a sloppy scramble with the green peppers.

IMG_6907.jpg

I added the tomatoes just long enough to heat them through.

IMG_6909.jpg

Fresh-Baked Taste Tidbit: To make the muffins taste fresh baked, I microwaved 3 for about 30 seconds to warm the inside. Then I baked them in the oven at 300 degrees F for about 3-5 minutes (don’t overcook or your muffins will get hard and we don’t want hard muffins).

IMG_6915.jpg

The meal actually looked really pretty: egg scramble, zucchini muffins, and fresh green pepper spears (I didn’t want to have more pepper than eggs in my scramble so I reserved some to nosh on).

IMG_6920.jpg

I topped the eggs with fresh basil from my garden. Not sure I loved the combo of the tomatoes with the eggs, but aren’t eggs the easiest (and quickest) protein sometimes?

IMG_6916.jpg

And the muffins were the star of the show for me – they are soo freakin good. If you’re looking for a good zucchini bread recipe (and an easy one too! ooh and it’s healthy!), then you must try this Cooking Light recipe. The muffins don’t take nearly the same baking time as the bread, and they’re wonderful little bites of zucchini deliciousness. I did one loaf and 10 muffins, but either one works. It’s the FLAVOR that I really love! I think it may be the lemon zest that adds extra deliciousness.

PS I definitely had a fourth muffin. Whew!

IMG_6924.jpg

So glad I made this instead of getting fast food!

Do you prefer eating in or out? Why?
