I had a granola bar for a quick breakfast this morning.

Funny how my eats revolve around homemade granola bars when I have them. They’re so irresistible!

Take some Italian spices…

add balsamic vinegar

EVOO

salt + (cayenne) pepper

Balsamic Roast Chick Peas

Description

Roasted chickpeas make a great snack, potluck dish, or salad topper…among other things. They’re easy, affordable, and pretty healthy. Hope you like them as much as I do!


Ingredients

Scale
  • 1 18-ounce chick peas, rinsed and drained
  • 1 1/2 tbsp EVOO
  • 1 tsp balsamic vinegar
  • 1/2 tsp dried basil
  • 1/2 tsp rosemary
  • 1/2 tsp salt
  • 1/4 tsp oregano
  • 1/4 tsp thyme
  • dash garlic powder
  • dash cayenne pepper

Instructions

  1. Pre-heat oven to 400 degrees F. Line a baking sheet with parchment paper
  2. Combine all ingredients except chick peas and whisk till emulsified.
  3. Add chick peas and stir to chick peas are well coated.
  4. Spread chick peas evenly in the prepared baking sheet.
  5. Bake for 25-30 minutes, stirring halfway
  6. Enjoy!

I couldn’t resist some doughnut holes hubby picked up for me today. I knew I shouldn’t eat it before my workout (even though it was a few hours away), but I couldn’t resist. πŸ™‚

I know some people I work out with even eat fast food for lunch before an evening workout, but I get pretty particular about what I eat any time during the day when I have a big workout ahead. I try to avoid fast food and sodas (neither of which I eat much anyways) and sweets (sad face) before a workout. Especially 2-3 hours before, I try to eat light food that is easy to digest. Well, actually, it used to be I tried to avoid bad foods, but thanks to Thrive and Brendan Brazier, I’m starting to focus on easy-to-digest eats before workouts.

Hubby and I have been enjoying the bars so much, though, they’re not going to last long.

I think I’m slowly starting to get the hang of putting together a good playlist. What I need to work on next is upping my stamina so I can make the playlist hard without passing out on my class! πŸ˜†

  1. Well lately I haven’t been eating before runs…Which is something I never used to do. Although, the past couple days I HAVE been eating an hour or so before and I just feel slower. I also love thinking about my breakfast my entire run. Maybe I run faster knowing breakfast is awaiting at the finish line;)

    Anywho, I can’t eat heavy before a work out. Banana with peanut butter has been the best thing I have found for sustained energy.

    I’m in Miami Trick, that was so fun at HLS, you are SO good at zumba *obv* it’s so fun to have your workout *calling*.. for me its hot yoga. Funny about bailey and the pants!

  3. Oh yes! If have anything really greasy or heavy, my workouts really suffer and are even more grueling than I already make them. I try to not have too many breads or pasta and rely mostly on fruit and veggies to hold me over. The other day I had some tortilla chips and salsa an hour before my run and the pain it caused was not worth the glory of those chips πŸ™‚

  4. Haha I am pretty strict on what I eat most of the time πŸ˜‰ It is food I like though, so it works for me. Fast food and stuff like that just doesn’t appeal to me. It makes me feel gross and greasy.

  5. What a fantastic recipe. I need to get back into Chic Peas again. Last year, I went through a phase of roasting all different kinds but I’ve stopped for awhile. I’ve never tried balsamic though. Great idea!

  7. i used to be particular about what i ate before a workout/meet in HS and college. but now that i run in the AM most days i don’t eat anything before i run. i need to eat at least 1 hr before working out so i don’t want to get up at 5 am or before πŸ™‚

    • Hi Alex,

      Of course I do!

      First of all…corgis are the cutest EVER puppies so if you see one, you’ll probably have a hard time letting go.

      There are 2 types: pembroke and cardigan. The caridgans are a little larger and generally have long tails, while the pembrokes have no or docked tails. I’m not familiar with any other differences between the two, but there may be.

      In general, they’re very good dogs. They’re smart and well-mannered, in general.

      Bailey really likes learning new tricks and having activities and responsibilities. It’s one of the reasons we trained him to “get the mail” and “get the paper”. They’re pretty easy to train.

      He also really likes going for walks and being outside.

  11. So it’s day 1, the night is almost over and I’ve just drank about 40oz. of water. Aside from the weekly SBUX latte run, few glasses of milk, and all natural juice (pom), all I drink all day IS water. I figured 60oz is nothing. I can do this. Let me tell you, boy, was I ever wrong. It’s a freakin’ lot more water tha I thought it was. Tomorrow I’m gonna pace myself more and get my drink on! Kinda like happy hour back in the day way back when?…

    BTW, I’ve gotta try that chickpea recipe and that granola one too(you posted the recipe in prev post right)?

      • I’ll definitely make them both one of these days and let you know how it turns out. As far as the water challenge..so far, so good. I’ve been avg between 50-60oz a day (made 60oz 2 days). Thanks for asking!

  12. So… I decided to create a blog. I’ve just been playing with it so far. I need a really good camera so can take better pictures. The first ones I took were awful.

    This recipe looks so good and it is soooo easy– that is my kid of cooking. I love chickpeas, though, so this sounds really good.

  15. Diana. Question regaurding roasted chick peas… how do you store them? I made them (ate a lot in the process) and stored the rest in a zip-lock and now they are all soggy! any advice???? maybe re-roast??

    • Interesting! I stored mine in a tupperware and used some the next day on a salad. I wonder why they’re soggy. Do you think they spoiled? Have you kept them in the bag for long? If they aren’t spoiled, I’m sure re-baking would help them dry out. πŸ™‚
