Mochi Cake Froyo

I can’t believe the weekend is over already! My mom had to work so I didn’t get to see her. *sad face*

I grew up drinking instant coffee and my parents still drink the stuff. I much prefer brewed coffee these days, but the instant still does the trick in a bind.

Dad decided to whip up breakfast this morning: fluffy scrambled eggs with cheese, rosemary potatoes & onions, bacon, and OJ.

And before I hit the road, I had a quick lunch – some of my parent’s homemade beef & barley soup and one of those amazing rye bagels with a dab of real butter. Man that thing is addicting and the soup was so yummy.

I’ve been feeling a bit dizzy all weekend, which I think is due to any or all of these things: dehydration, lack of B vitamins, lack of iron. Who knows, but I needed to hydrate up anyways for zumba class later and coconut water was my drink of choice.

Did you know that coconut water has more potassium than 2 bananas? Yea…me neither but I read it on the label.

I ended up eating a banana in the car, too, so I guess I got extra potassium.

I think my zumba shoes are done-zo! I freakin danced a hole in them guys! Two holes actually – one on each side. The one pictured is just much larger.

Anywho, I had a fabulous full hour of zumba and loved every minute. I’m so glad I don’t have to put up with the days when I drug myself to the gym and forced a workout out of obligation. Now I often go for FUN!

Hubby and I must have been feeling lazy from all the traveling because we opted for pizza night tonight. First up, a trip to the grocery store to stock up on veg. I used the groceries to make some big salads with organic romaine, organic celery, organic green bell pepper and tomatoes (including Green Zebras!) from my Garden.

3 slices of thin crust, NY style pizza!!!

And hubby and I took an impromptu trip to get froyo. I wanted to invite my Charlotte friends but we left so last-minute, I didn’t want to inconvenience anyone.

Anywho, I tried some new stuff today in my froyo cup:

  • tart original froyo
  • green tea froyo
  • a new froyo flavor – pomengranate froyo
  • coconut…make that EXTRA coconut
  • kiwi
  • strawberries
  • blueberries
  • pineapple
  • and a new topping – MOCHI cakes (the little white squares)!

Ya’ll, that mochi stuff is freakin delicious! I mean…I’ve had mochi cakes and other mochi desserts before so I guess that shouldn’t be a surprise, but it’s awesome! Try it!

And the pomengranate froyo surprised me. I didn’t care for it based on the sample, but for some reason, it meshed really well with the rest of the flavors and toppings. Nommmm!

Froyo was enjoyed over Drop Dead Diva! Gosh I just love that show! Does anyone else watch it?

And now I have a Cold Case to wrap up before I hit the sack.

Gotta go sweeten my hot tea, too! Mmm. Perfect bed time drink and an easy way to hydrate up.

What are your favorite froyo (or ice cream) toppings?

my favorite is also mochi !! I usually get a couple fruit flavors of yogurt, then top with the actual fruits and mochi… YUM :)

…then I sneak a bite of Jason’s… he usually has some sort of chocolate :)

I have been making a maple coconut peanut sauce (recipe just posted on my blog) and putting it on my coconut milk ice cream lately. SO GOOD!

Coconut water is awesome! I drink it all the time after running in lure of gatorade!
