Eat Your Greens…For Breakfast!

People put too many rules around the things they eat. I prefer rule-free eating. 🙂 One of the “rules” that seems to be most commonly observed is what one can and cannot eat at certain times of the day. I mean…you wouldn’t typically eat chocolate cake at breakfast or a hamburger and fries for breakfast, right?

People just…know…what to eat and when.

One thing I’ve never really seen is servings of veggies at breakfast. I mean, sure…sometimes you see omelets or egg scrambles with a lil bit of veggies tossed in, but you don’t ever really see a whole SIDE of veggies! Well…I’d like to change this way of thinking…starting with moi. There’s no real reason to not eat veggies at breakfast! It’s an easy way to get another veggie serving in for the day and gets your day started off on the right foot with extra nutrients and goodness fueling your body.

My family sent me home with a giant bag of green beans after our weekend with them, so I decided to go ahead and dig into them first thing this morning.

A quick trip in the steamer basket and…

Behold! Breakfast green beans (topped with some nutritional yeast)!

And poor little green beans just don’t get the credit they deserve. I mean, I’ve always just thought of them as boring ole’ green beans because they’re so commonly eaten.

Did you know this about green beans:

  • The Vitamin K in green beans helps keep your bones strong.
  • They’re a great source of fiber, plus goodies like Vitamin A, Vitamin C, Potassium, Folate, Magnesium and Ribovlavin.
  • Green beans have anti-inflammatory nutrients.
  • And they’re a really good source of iron! (who knew?)

Plus I had some Dakota toast with MaraNatha Organic Peanut Butter, which I picked up on sale at Whole Foods this past weekend.

I cooked up some crowder peas from my parents garden today. I figured if I just went ahead and cooked them I could eat them the rest of the week.

Post work, I went to ZUMBA! I had too many pre-workout snacks so thank goodness I wasn’t teaching tonight and could lay a little low in the back. Still got a great workout and had a FUN time! 🙂

  1. When you make the steel oats will you put up a recipe/hints. I just got the same bag at Whole foods this week and am at a lost of what to do with them. I love the thick cut oats and wanted to try something new. Thanks!

  3. I love that you break the “food rules.” One I break all the time is eating breakfast for dinner. Who says you can’t have oatmeal any time of the day? 🙂

  4. Good idea! I don’t generally have veggies except for inside an omelet or breakfast burrito/sandwich. I think it is more of a convenience factor though. One of my dogs seems to get in the most awkward positions too sometimes. 🙂

  5. Bailey is SO cute playing fetch, and that nap pose is hilarious… looks like he fell off the couch??

    Jason and I were doing a raw cleanse last week, so I was eating SALADS for BREAKFAST!! 🙂 I loved it, and figured why not??

  6. Off topic but I wanted to let you know that I tried your 1-2-3 Noodle dish the other night. My husband and I are trying to eat in and eat healthier. Since he’s a vegetarian and worried about his protein intake, I thought the tofu in the noodles would be a plus.

    To be honest, I had some misgivings considering he really likes spicy or rich foods. Plus, I’m not sure he’s ever had kale.

    Huge success! He really enjoyed it… as did I and it’s now become a staple in our house.

    Now I’m off to scour the rest of your recipe section! Thanks Diana! 😀

  7. huh… never thought about veggies at breakfast. i do like veggies in eggs (peppers, onion, spinach, mushrooms, tomatoes, etc.) but it never has occurred to me to have a side of veggies! but i must say, i am totally a “breakfast-food-at-any-time-of-day” eater. breakfast for lunch? check. for dinner? check. breakfast 3 meals in a row? yep, that’s me! 🙂 not always though. one of my favorite birthday traditions is having cake for breakfast in the day(s) following your birthday. yum!

    Hope all is well. 🙂 Did you find those chia seeds at Whole Foods? We are planning to make the 90 mile trip to the closest Trader Joe’s and Whole Foods to stock up and I was wondering if I could score some of those there; dying to try them on my own Power Toast. 🙂

  9. I have a breakfast i love: it’s cauliflower steamed (almost made in to a mashed potato sort of consistency) with 2 boiled eggs and avocado, all mixed together with some salt & pepper on it. it’s really good, honestly!!
