I wonder if maybe we have different oven temperatures or something, so the baking times were different? Maybe it would be better if you took it out sooner? Or maybe you're right and it's the flax eggs? It's hard to make cakes this size with real eggs, but maybe you could just use an egg yolk or something? The cake was a bit crusty on the outside and on the inside the texture was more like a bread. It looked more like a cross between a cookie and a sweet bread. I guess it is because of the flax eggs.
