Hey Lindsey, me, too, girl! I feel like I'm always running late for work. haha. Anywho, I would think you could do that (make oats the day before). I'd probably leave out the vanilla, butter, and chocolate chips (and any other toppings) until the morning. I've never tried this with regular oats, but I did have a lot of success with steel cut. I made a big batch in my slow cooker and then put the leftovers in the fridge or freezer and re-heated it when I wanted it quick. Here's one of my posts about it: http://thechiclife.com/2010/09/steel-cut-oats-fast.html HTH :)

This sounds so yummy!! Can you make it the night before and reheat it in the morning. I don't have a lot of time in the morning to make breakfast, because I am usually running late so I eat a quick bowl of cereal, bar, or breakfast on the go, but this sounds amazing and think would be a great start to my day!!

I've made this twice now and love it. I didn't have the chia seeds or pecans, but I subbed in ground flax and a teaspoon of peanut butter (I cut the butter out too, because peanut butter adds enough fat) and it really did taste like a healthy version of cookie dough. I've also tried a couple of your smoothies and I am a fan.

Oh boy, does this look good! Other blogs I've seen have similar recipes to this, but all they do it add chocolate chips to their recipes!!

Unfortunately, I've already had my breakfast; I'm sure this could - and should! - double as a dessert.

You're so welcome! Hope you like it! :) I too have trouble veering too far from my classic, tried-and-true faves. But every once in awhile I like to switch it up. ;)
