Tropical Oatmeal – Year-Round {Recipe}

Description

Whether it’s the middle of the summer or you’re just missing the beach on a snowy winter day, you can enjoy this bowl of Tropical Oatmeal any time of year thanks to the use of dried fruits. Check out the bulk bins at your local health food store for a wide selection of your favorite tropical fruits and nuts. Oh, and unless you can’t consume coconut milk, I highly recommend not substituting it, because I think it really makes the oatmeal taste more exotic and delicious.
*Vegetarian, Vegan* Cook time : 8-12 minutes (stove top) Serves : 1


Ingredients

  • 1/3 cup dried, old-fashioned oats
  • 1/3 cup canned coconut milk (or sub milk of choice)
  • 1/3 cup water
  • 1/2 teaspoon chia seeds
  • 1 banana, sliced, optional
  • approximately 1 tablespoon each of your favorite dried tropical fruits and nuts. I used: papaya, pineapple, macadamia nut, coconut flakes, almonds (I usually just scatter the toppings over the oatmeal till I think it looks like enough sans measurement)
  • 1/2 teaspoon flaxseed, optional

Instructions

  1. Combine oats, coconut milk, water, and chia seeds in a small, non-stick pot and stir together. Turn heat to medium-low.
  2. Cook until oats have thickened to your texture liking, about 8-12 minutes, stirring occasionally.
  3. Stir in sliced banana and pour mixture into a serving bowl. Top with dried fruits and nuts and flaxseed, if using.
  4. Turn on a Beach Boys song and enjoy!
