SCBR Week 6/ Day 4 Food/Exercise Journal

8:00 am – Coffee + AB Oat Bran Toast – First Signs of Feeling Full (6)


This morning was another tough morning for me…nothing dramatic, I just went to bed too late tonight and waking up was haaaaaaaard this AM! I started out with a brew of 1/2 Breakfast Blend and 1/2 Hazelnut coffee with sugar and milk.


For eats, I had some Great Harvest Oat Bran bread toasted with some Barney Butter.

12:15 pm – Rainbow Salad + Walk + Chocolate Ice Cream – First Signs of Feeling Full (6)


After my less-than healthy day of eats yesterday, I really wanted something refreshing and LOTS of fresh veggies. I hit up a salad bar and got started loading up. As I was beginning to add veggies, I remembered that one of this week’s changes for SCBR is to “Eat plenty of colorful fruits and vegetables.” I decided to try to pick out veggies as I went over the colors of the rainbow.

  • Red: cherry tomatoes, red pepper
  • Orange: orange pepper, baby carrots
  • Yellow: didn’t find any yellow veggies on the salad bar
  • Green: lettuce, spinach, broccoli, celery, edamame, green pepper, cucumber
  • Blue: no blue either!
  • Purple: purple cabbage, radicchio, a slice of pickled beet (though maybe the last 2 are really “red”?)
  • White: beans
  • Black: beans

I guess white and black aren’t part of the rainbow, but they were on my salad!


I had a great time picking out all the colorful veggies – it was fun and healthy! I also added some chicken, sunflower seeds, and sun-dried tomato salad dressing. I was shocked at how low the calorie count was for this salad…veggies are SO low in calories…no wonder people eat salads when they’re trying to lose weight. I never thought they were filling before, but I think the beans, chicken, and seeds really helped fill me up. I think the key with today’s low-calorie salad was that I picked a light-ish dressing and didn’t add any of the “heavy” ingredients: bacon bits, cheese, croutons, etc.

After lunch, I went with a co-worker to take a quick walk-break. We were gone about 20 minutes and even ended up stopping at a local chocolate shop to scope out their goodies. It was pretty hot today so we ended up getting ice cream! We both got kid’s sized chocolate-flavored ice cream on cones. The ice cream was delish and helped keep us cool on our walk back to the office. I didn’t feel the least bit guilty for my indulgent treat, it was soooo good!


By the time we got back to the office, I only had this wee bit of cone left, which I photographed and then promptly gobbled up…yum!

3:00 pm – Clementine – Content (5)

In the afternoon, my boss offered me a clementine, which I happily accepted. The fruit was so juicy and just delicious. I actually got some fruit at the store when I got my salad, but didn’t end up eating the mixed fruit. The clementine was enough and so good. I forgot to take a photo.

4:30 pm – String Cheese – Content (5)


I spent the rest of the afternoon continuing my snacky afternoon habits. I had a string cheese and then some 2% milk on my way out of the office. I drank it from the mini-milk I have in the office fridge for my oats. I only had it because when I totaled my calories up, they were pretty low and I didn’t have much dairy by then either.

8:00 pm – Egg Scramble Wrap + Sweet Potato – First Signs of Feeling Full (6)


We finally had the egg scramble wrap that I’ve been trying to make all week. I started with a colorful array of peppers (still working on that “colored fruits and veggies” change for SCBR this week). I got all 3 of these from TJ’s for a mere $3.69…Can you believe that!


I hardly even needed any for the scramble. I chopped up some pieces from the tops of the peppers and some onion I had leftover from a previous meal.


I started by sauteing the onions and peppers in a wee bit of olive oil, seasoned with some salt and pepper.


Then, I added the eggs and scrambled them up. Once the eggs were almost done, I added some baby spinach (about 1/2 cup) and wilted the leaves.


Then, I topped everything with some Mexican blend cheese leftover from our quesadilla dinner the other night.


I lightly stirred the eggs till the cheese melted and got all gooey and then I spread some in the middle of a TJ’s whole grain tortilla.

I did a micro-waved sweet potato for my side. I added 1/2 tbsp of real butter, 1 tsp of brown sugar, and 1 tbsp of chopped pecans on top.


Yummy dinner. I really need to try doing one of these scramble-wraps for breakfast some time!

Hubby noticed one of my fave Mediterranean places near the smoothie place he stopped by after his workout today and picked up a baklava (well, 2) for me since he knows I love them. Lucky for me, my calorie count was pretty low today even after all the snacking, probably because of the salad lunch. Although, to be honest, I think I would have eaten the baklava even if I was already over my target count…hehe. It’s so hard to resist a delicious dessert and thoughtful gesture, no?


Hubby actually got me 2 baklava and I had every intention of eating both, but I felt pretty darn full after the first one. I remembered that I need to continue to try to eat as intuitively as possible, so I waited a minute to listen to my body. I really wanted to eat that second baklava, but I could tell I was too full to eat it (and be comfortable), so I forced myself to wrap that second piece up for tomorrow. It was tough putting that second piece up when I wanted so badly to eat it and it was sitting right there in front of me, but I felt better after the baklava was put up and I didn’t overstuff myself.


I did enjoy a nice mini-portion of 2% milk with dessert. They go so well together!

Did I mention I did some brief weight-lifting for my arms yesterday? I cannot believe how bad a shape I’ve let myself get. I used to be so strong! My arms, shoulders, and back muscles are achy today! I’m so glad I’m starting to do strength training again because I want to be fit like I used to be again and this will help me cross train.

Anywho, good thing I went for that walk with my co-worker today. I also went for a quick walk with hubby to visit an open-house near our apartments and we hit up quite a few stairs checking out the rooms! I was just over my target calorie amount of 1437. :)

Thinking Pink – Second Annual Pink at the Plaza – 5/2/09

A Quick Background

Over the last couple years, I've done many-a-craft show for my jewelry business, but I've wanted to do more in my town.  One of the shows I did was a small jewelry party, which I held to help my friend raise money for her Avon Walk for Breast Cancer participation.  Putting those 2 ideas together, I decided to propose an idea for a bigger craft show, with lots of vendors, to benefit the Avon Walk for Breast Cancer.  I pitched my idea to the local operations manager for the Walk and he liked it! 


Fast forward to today and we're currently working on our Second Annual Pink at the Plaza (PATP) - an art & craft show to benefit the Avon Walk for Breast Cancer and the Walkers.

The Location

So, this is the first of many announcement-type posts I'm ready to release.  The reason I've been holding out is because we have a fabulous new location, and I didn't want to jinx myself because I still can hardly believe we got the venue we did!  My counterpart and I chose a popular shopping center, Promenade on Providence, in Charlotte, NC that we thought had great foot-traffic and wonderful visibility as our #1 choice for the location for this year's event.  We got the property manager's name, called, and a couple weeks later, they accepted!  I have to say, I didn't think we'd be lucky enough to get this spot because I think it's really "all that and a bag of chips," but we did it!

This shopping center has tons of great shops + restaurants and is super busy, especially when the weather is as nice as it has been around here lately.

Pink at the Plaza is an art + craft show benefiting the Avon Walk for Breast Cancer and its Walkers.


About: This is the second annual PATP event ever!  The event is outdoors (rain or shine) and free to the public.

Going Forward – Call for Vendors

I've been working hard updating the vendor applications, editing the event Press Release, and starting to get the word out, but there's still a lot of work ahead of us.


I also already made basic updates to our event's web site, though I need to work on some graphics, still.  I actually made the whole web site for the event by myself!  It's pretty basic, but I think it looks decent.  Luckily, I only had to change a little info since the site was pretty well set up from last year's event.

Call for Vendors – for any artists/crafters – we're accepting vendor applications until April 1st, 2009.  You can check out this page for vendor details.

For any one else - I know the event is specific to one city in the world, but any help you can provide getting the word out helps a ton and since I'm working with a non-profit, and our budget is next to nothing and we need all the help we can get!

SCBR Week 6/ Day 3 Food/Exercise Journal

8:00 am – Coffee – Content (5)

I had a harder time waking up today than I had yesterday. I felt, literally, like a rock…so heavy! I made a slightly larger than normal mug of coffee with Breakfast Blend, sugar, and 2% milk. I was soo tired, I totally forgot to take a photo…oops!

9:30 am – Cranberry/Strawberry Oats – First Signs of Feeling Full (6)


Guess I was more tired than I thought because I totally forgot to take a photo of my oats, too! They were berry-licious, though!


  • 1/4 cup 1-minute quick cooking oats
  • 1/2 cup water
  • 1 tsp flax
  • 1/2 tsp sugar
  • 1 tsp seedless strawberry jelly


  • 1 tbsp 2% milk
  • 1 tbsp dried cranberries, on top
  • 1 tbsp sliced almonds, on top

11:45 am – Indian Buffet – Very Full (8)


I talked some co-workers into getting Indian buffet again today – yay!

Post-Lunch Walk

We were all so stuffed after lunch, we decided to go on a little walk. Unfortunately, I decided to wear heels today, but I went anyways because the weather was just too nice. My feet hurt a little, but it was worth it for the quick exercise and fresh air. I had to wear some black, fuzzy slippers the rest of the day, which I tried to hide under my desk as best I could. Why do I have fuzzy slippers in the office? Because my feet get cold and sometimes I’ll slip them on under my desk to warm my tootsies up.


I had a nice, big cup of water (make that 2) when I got back because I knew I wanted to do some walking/jogging after work today and I wanted to get some liquids in me.

Couch-to-5K Test Run

So without letting too much out of the bag, I’m starting to really, genuinely consider signing up for the Couch-to-5K program. I decided to give the program a test run today to see how it worked and if I could do at least one of the beginning exercises. I know that must sound crazy to experienced runners, but runner, I am not. Running really is a challenge to me. I think I’m in pretty good physical shape, but running eludes me somehow.

The day 1 task is to stretch, do a brisk 5 minute warm up walk, then alternate 60 seconds jogging with 90 seconds walking for 20 minutes. Then 5 minute cool down walk, then stretch.

The first minute was over before I knew it. I couldn’t believe how fast it flew by! Each of the 90 seconds of walking seemed to go on forever…the walking “breaks” were very appreciated, especially towards the end of the workout. By the halfway point, I was starting to feel winded and was feeling like I normally do about running, but I kept going. When we reached the last 5 minutes, we were jogging uphill and I was feeling veeery tired and antsy like I start getting whenever I’ve tried running before. I decided to look at the situation logically and when I realized that in the 5 minutes left, I basically only had 2 1-minute jogging sections left, I realized how simple the last 5 minutes would be and the realization totally lifted my spirits. Hubby even took Bailey with me and we all 3 did the intervals together. It was so fun! Tiring, but fun! I’m kind of already looking forward to trying another session.

So, here’s the deal, fellow non-runners…I haven’t decided exactly when yet, but what I’d really like to do is see if any one wants to do the Couch-to-5K program with me, but virtually. You can do the program whenever you want, but I’m hoping we can start on the same week, so we’re all doing Week 1 during the same week, etc. The 3 days you do your exercises will be totally up to you, but I’m hoping we can connect via a blog post I do here on TCL with comments etc to talk about our experiences and what motivates us to keep going through the various exercises.

Any one interested? If so, go ahead and take a peek at the program and see if it’s up your alley. I won’t start doing the actual 9-week program until I’ve officially announced it via a blog post here so peeps can sign up to do it at the same time…probably not for a couple weeks. I think this will be a great way for me to motivate myself to give running a legitimate try and may help some of the others who’ve commented that they don’t run, but they want to like it. :) I do have one last trick up my sleeve, but I’ll announce that part later. :)

8:45 pm – Chick-Fil-A – First Signs of Feeling Full (6)


I had a great dinner planned of a veggie egg scramble wrap, but when I checked the eggs post-workout, 2 were cracked leaving a mere 1 left…not enough for both me and hubby.

One of my best friends called me to catch up today and while we caught up over about 2 or 3 hours, hubby went out and got Chick-Fil-A for dinner. *Mar – it was so good catching up with you today – it’s been too long!*

I had a lemonade to drink so I could avoid caffeinie, but I only had about 1/4 of the drink.


For my meal, I had a 6-count kid’s chicken nugget meal with fries, Polynesian sauce, and ketchup. Yup, you read right, I had a kid’s meal. The adult ones are so darn big! The kid’s ones are about the right size…for me at least.

I feel like the eats were pretty unhealthy overall today, but again, the portions were relatively small, which helped keep my calories down. I’m still not too happy with the eats today because I really needed some more veggies and fruits and I prefer to eat out for only 1 meal of the day, not lunch AND dinner. At the same time, I like to be flexible and I don’t want to force myself to eat anything or not anything, so today worked out ok. I also forgot to have a snack today in between meals! Anywho, I know I am eating lunch out tomorrow, but hopefully, I’ll be able to put a good, healthy dinner together at least.
