Phew! Just got home…it’s a been a long night of studying, but one of our zumba head instructors was kind enough to have us over for dinner and to have a group AFAA study session (Thanks Sara!).
I was hoping to do a post on yesterday, but instead, I’ll just share the pretty food pics I took:
Monday Breakfast – First Pumpkin Oats of the Season!
First PUMPKIN OATS of the season! First Pumpkin Lattes and now Pumpkin Oats…fall is here! I made my bowl with chia seed, flax seed, maple syrup and pecans.
Monday Lunch – Leftover Peas + Greens
I served my leftover Peas + Greens over Kashi 7 Grain Rice Pilaf. Yum!
Snack
Stonyfield Plain Oikos yogurt parfait with sliced strawberries, banana, almonds, and agave syrup
Monday Dinner – Bison Spaghetti!
Hubby requested spaghetti so I did a healthy play on the dish using local ground bison from Earthfare. We normally get around 1 lb of ground beef for our spaghetti, but I’d rather have more quality over quantity, so we got just under a pound of the local ground bison instead.
Roasted Garlic Italian Demi-Loaf
2 tbsp butter + 2 tblsp extra virgin olive oil + 2 cloves smashed garlic. Heat over low heat while cooking evthing else. Brush over toasted bread (this is a Rachel Ray recipe…abbreviated form) PS I like to add a dash of salt to my mixture.
Salad
Dinner is served!
Bison Spaghetti = Deliciousness
Bison Meat Sauce tastes just like the kind we make with ground beef, but is much more healthy. I’d google health stats, but I am about to fall asleep. You would too if you’d just worked all day in a cubicle and then spent 3 hours studying for the AFAA!
Delicious toasted butter/olive-oil-drenched bread…sooo good!
We had some good eats for Labor Day. Not the tradition grill out party you typically see in the South, but it worked.

That bison spaghetti would be something i would love! I'm a big meat eater. I'm so mad – the last night of my vacation I was going to order the mustard – crusted bison but opted for something else which wasn't very good 🙁 I hate when that happens!
