I was really looking forward to leftover vegan Banana Cream pancakes this morning and you guys know I do NOT like leftovers!
To reheat my vegan pancakes, I pre-heated the oven to 300 degrees F, then put the pancakes on a baking sheet and baked them till they were heated through – just a couple minutes since the pancakes are so thin. So much better than microwaved pancakes!
I heated up some real maple syrup with some Earth Balance for a buttery sweet dipping sauce.
To cut the sweetness, I had a Morningstar “sausage” on the side. Mmm…pancakes, syrup, “sausage”…YUM! Gooooood Morning Monday!

Yummy! I had Greek style mango-apricot yogurt with almonds, flax, and coconut 🙂
Oh, when i see these things I can't help it but to ruin my diet. It really looks delicious.
