It’s been too long…this morning, I was really looking forward to…
Pumpkin oats!
I used organic canned pumpkin and Manitoba Harvest shelled hemp seeds!
Hemp seeds: These hemp seeds are the bomb! They are a source of Omega 3, contain all 10 essential amino acids and are a great source of protein – about 11g per 2 tbsp!
Also in the oats: skim milk, extra thick oats, flaxseeds, pepitas and for my sweetener – a drizzle of maple syrup.
Yum!
This morning at work, I was needing something hot to keep me warm and something with caffeine to pick me up. Did I go to Starbucks? Heck no, I didn’t! I’m doing the Eat in Month Challenge. Instead, I brewed up a deliciously satisfying mug of hot tea – black tea with cream and sugar! It was fab…looking at this picture makes me want more! Maybe I’ll get some tomorrow?
Lunch was leftover beef + spinach lasagna.
I thought I was going to leave work a little “early” (5:15pm-ish) but got held up unexpectedly. Besides that, work was mentally stressful today! I was feeling pretty wiped out and not like cooking or preparing food, but I knew I had more lasagna to easily heat up, so that was nice.
I decided to take a trip to Trader Joe’s (grocery stores like TJ’s and Earthfare make me happy for some random reason) to pick up some stuff to make salad and possibly some vino.
I got some good produce: organic romaine hearts, broccoli & cauliflower duet, organic baby carrots, and orange bell pepper.
And, oh yes, I got some vino – Rootstock Syrah – tonight’s TJ wine sample. I always fall for their wine samples. This one is a bit more dry than I normally like, but overall, I enjoy it.
Whilst prepping salads tonight for dinner, I decided to make some for me and hubby to have with lunch tomorrow. Hey, if I was already prepping it, why not make extra and save myself some work later?
I must say, our salads tonight were pretty bada$$. We had: organic romaine, broccoli, cauliflower, organic baby carrots, orange bell pepper, some 3-bean salad, sunflower seeds, and Drew’s rosemary balsamic dressing.
Soon after starting, I thought my salad would be better with some shelled hemp seeds.
So I added a light sprinkling of hemp seeds to my salad (and to hubby’s).
Dinner was leftover beef + spinach lasagna. I know – I had lasagna for 3 meals in a row! Hey, this lasagna isn’t going to eat itself! Hubby and I will likely have to attempt to freeze some of this lasagna tomorrow so we don’t make ourselves sick of it.
Halfway through dinner, I remembered the rosemary olive oil bread that Kat + Stacy gave me yesterday. As soon as I remembered it, I paused eating to toast some up in the broiler with a drizzle of olive oil. As simple as that, it was the perfect accompaniment to dinner.
I was craving a little chocolate to go with my wine, so I broke off a couple pieces of my stocking stuffer – Endangered Species Dark Chocolate with Goji Berry, Pecans, & Maca.

Today for dinner I paired trader joe's turkey meatballs with whole wheat pasta. I really liked the meatballs!
Hi, what do hemp seeds taste like? I heard hemp "milk" has a very earthy taste…I was just wondering. I also bought pepitas (pumpkin seeds) to put into oatmeal & it's great.
Also, I think I need to join that Twitter group, I slack off too much! LOL

Hemp seeds don't have much of a powerful taste. I guess I should try tasting them on their own. I've only ever eaten them as a topping and haven't noticed a flavor. Just a slight texture. They're sort of like flaxseeds.
