Just Another Manic Monday

I went to bed late all weekend and thusly went to bed late last night. I woke up quite groggy, but headed to work at a decent hour.

Mostly, I was looking forward to lunch. I got a new turkey flavor over the weekend from Earthfare – hickory-smoked. I toasted this with some muenster cheese on Great Harvest Honey Whole Wheat.

I was really excited about my side dishes: Balela bean salad from Trader Joe’s – yummy chick peas, tomatoes, and fresh herbs.

I also decided to try out the beet salad from Earthfare. I’ve never really not liked beets, but I’ve never really cared for them either. I keep hearing how good they are supposed to be for you, so these have been added to the list of foods I’d like to like (along with olives and mushrooms).

I thought the beet salad was actually pretty good today. I really liked the combination of flavors Earthfare used and the beets were nice, tender, and sweet.

I have leftovers of both sides for tomorrow.

I forgot to tell you guys yesterday about the Larabar deal I got. Earthfare had Larabars 4 for $5! I got 4 flavors: Pistachio, Coconut Cream Pie, Banana Bread, and Pecan Pie. Can’t wait to eat these!

No, really! I couldn’t wait. In the afternoon, I downed this pistachio Larabar for pre-zumba workout fuel.

I thought the pistachio bar was pretty good. Pistachios, in general, I think have a light flavor. As with all Larabars, I loved the chewy texture. Not to mention the fact that this bar had a mere 3 ingredients! Nice!

After work, I met up with my zumba friends to do a freelance photography shoot! Ok, so I’m not sure I can call it a “freelance photography shoot” since I did it for free, but still! I did take their photos for their zumba stuff.

After our brief photography session, I did two back to back zumba classes. I managed to skip a couple to a few songs in each class (can’t push too hard till I’m 100% better) and tried to stay low intensity. I probably went more like medium to high during the classes, but I’m feeling pretty good right now. Hopefully, my leg doesn’t complain too much after work.

After class I showed my zumba friends a new song choreography I’m working on – Britney Spears – I’m a Slave 4 U. They liked it, but my head instructors will be the true test and will give us a thumbs up or down on doing it in class. I still haven’t showed them the Shakira song!

By the time I got home, hubby was cooking dinner. I prepped salads for us with organic mache, organic cherry tomatoes, organic baby carrots, pine nuts and balsamic-based salad dressing.

Hubby’s dinner = Freschetta supreme pizza. I had 2 small slices sans sausage.

For dessert, I had an organic kiwi (1/2 with skin and 1/2 without) – I forgot to take a photo till I was almost done eating, but there was a whole kiwi here at some point.

I also had a praline for a second dessert. Check out you-know-who waiting for me to drop something. I didn’t drop a crumb! I enjoyed the whole thing!

PS We’re hopefully moving to our house this weekend (if everything goes ok with the contractor/hardwoods this week) Yay! 🙂

    My Monday was pretty good – I finally started to feel as though a routine was blooming and things were getting a little more normal around here!

  2. Wow your meals look so delicious…. haha honestly D I have a kitchenette in NY and I don't know how I'm going to make it work. I'm going to have to post pictures soon! I don't even have an oven!
