Long Day, Short Meal

Wow! Today has been such a long day! I left my house at 8:45pm (after watching Caitlin on the Today Show!!) and didn’t get home again till 9:45pm. That’s a long time to be away from the house! I’m pooped so I may keep this post short.

Also, thank you so much to the many commenters on yesterday’s post for weighing in! I love to hear from you guys! More on yesterday’s post in a bit…

Breakfast = fried cage-free egg and Dakota toast with real butter…coffee on the side.

I had lunch out with some co-workers and snuck this shot. I got the turkey club (with thick turkey, tomato, lettuce, avocado, bacon and Boursin cheese!) and a side salad. It was awesome but I only ate 3/4 of my sammie. I saved the rest for snack that I finished up around 3pm.

Thanks to your tips on preventing workout fatigue yesterday (click to view), I think you confirmed what I suspected – that my fatigue is most likely due to de-hydration. So….I picked up some coconut water while I was out for lunch to help get me back on track.

I also picked up this Banana Nut protein bar and noshed on half of this for a pre-workout snack.

After work it was time for mas ZUMBA! I visited another instructor’s class, and she let me lead Let Me Think About It (one of my faves!) and I ROYALLY screwed it up. Doh! I guess it wasn’t that bad a mess-up, but I felt stupid. I’ve only done that song a million times! lol Anywho, it was all good. 🙂

Post class I got my very own hater bracelet! A hater bracelet is a bracelet to keep the haters away. Apparently I can never take it off – or at least undo the knot. Kind of reminds me of the friendship bracelets I used to make with friends using embroidery thread when I was a kiddo. Anyone else remember those?

By the time I finally got home at 9:45pm, I wanted something light that I could put together quickly.

I heated up some frozen Lemony Lentil soup….

…plus some Dakota toast with a dab of real butter and a couple baby carrots for extra veg.

Man…nothing better than soup and toast sometimes! Especially when the soup is homemade and the bread is (pretty much homemade…ok at least made from scratch) too.

I love this note because it reminds me that though I have many good ideas, I need to take action on them or they’ll never become reality. I have a couple good web site ideas – one that I’ve had a URL for for …maybe a year now that I haven’t done anything with! Ahhh…if only there were more hours in the day.

Anywho, if you don’t already subscribe to these daily, uplifting notes, you should consider it!

  1. Must be an “easy dinner night”. I had granola and yogurt tonight for my quick, go-to dinner and Emily @ Thefrontburnerblog.com had cereal! But I’m having quick-dinner envy now because your soup looks better than my granola 😉

  2. I usually go with things that cook fast like shrimp and veggie stir fry, fajitas, or eggs for dinner. But there is always sandwiches and salads that can be thrown together super quickly.

  3. If I need something quick, I’ll usually make a bowl of spicy black beans with an avocado based salad on the side…with blue corn tortilla chips for dipping. 🙂

  4. it’s so funny how small the world is- I just started following you. i started following blogs bc of SweetTaterBlog- I went to college with Katie. and now follow Kath, Caitlin, etc. the other day I saw another girl I went to college with who’s living in CLT (which is where I grew up!), Emma. and then today I see Megan Paul on your blog- she and I went to high school together! I just think it’s crazy how small circles can get. and I’ve never even met any of you other bloggers in person! boggles my mind. look forward to reading more of your blog now!
