Hubby and I didn’t give up on those weird looking scallops from the other day. I mean, we gave up on those scallops, but not on scallops completely. Hubby and I went back to The Fresh Market and exchanged those strange scallops for new ones.
I decided to re-heat some of that leftover tomato risotto, so I could re-create my original idea.
I’ve only ever cooked scallops a handful of times, so I’m always a little cautious preparing them.
I heated up some frozen green peas for our veggie side.
All together now.
So simple, so tasty, so healthy and a good use of leftovers and pantry items! 🙂
