Ellie’s Marinated Tofu

For my second dish of my tofu smorgashborg, I decided to try a recipe I’ve been wanting to attempt for awhile – Ellie Krieger’s Marinated Tofu from her Small Changes, Big Results book (the one that helped me lose 15 pounds earlier this year!).

I also decided to do a play on the Natural Refresher drink I had at True Food in AZ, but I used my Yogi Ginger tea, Trader Joe’s Berry Bonanza juice, pellegrino, and agave.

For my veggie side, I cooked up some zucchini and organic onion

Thanks Ellie for the delish dish! The tofu was pressed to remove excess liquid, marinated in OJ, soy sauce, canola oil, sesame oil, and baked to perfection.

For my carb, I had a piece of Great Harvest Honey Whole Wheat toast with a little real butter.

The tofu was soooo easy to cook! Not the fastest, but definitely simple and I hardly measured anything, which is always nice.

I thought my berry-tea-fizz drink was pretty darn tasty! Only thing I would add is maybe a slice of lime…mmm…

Dinner is served! Now I just gotta figure out a way to get hubby to enjoy this as much as I do!
