Galaxy Granola + Sprouting Around


After a fabulous breakfast, lunch, and citrus-chocolate lunch-dessert, I continued the citrus theme by checking out another sample:

Galaxy Granola – they use applesauce instead of oil to make their granola, which means while it’s just as tasty as other granolas, it has 70% less fat!

I had a mini bowl with some organic milk as a snack this afternoon.

The verdict: I still love the crunchy texture of this yummy granola. Some pieces even stay crunchy in liquids…which I love…I dislike soggy cereal (unless it’s something like oatmeal, which is meant to be soft). Anywho, I really like how the granola is not sickly sweet, and of course the fact that they bake it in applesauce is pretty amazing! I loved the chewy bits of cranberries in contrast to the crunch granola, but I would have liked a little more orange flavor. I barely tasted it. Overall, another lovely granola from Galaxy Granola!


Hubby and I hit up The Flying Biscuit for dinner tonight. I started with a mixed greens salad and one of their famous biscuits with cranberry apple sauce. Yuuum! It’s my fave part of the meal (unless I’m eating those pancakes of course!). This place turns me into a carb monster! :lol:


For my main event, I got the turkey pot roast with potatoes and green beans. It was very tasty but I prefer beef pot roast. This dish was reminiscent of the one I had in AZ a few months ago and I’m not sure anything can top that!

Organic Garden Update


There are some exciting things happening in my garden! I’m starting to see things sprout, grow, and change.


Looks like there are some tomato flowers forming…


…and mini tomatoes!


3 out of the 9 green bean seeds I planted on 5/1 are starting to sprout. I hope the others push their way up soon!


There are also some tiny buds popping up from the beet seeds I planted! I’m hoping to eat both the beets and the greens that grow. I counted 5 – 4 in one box and 1 in another!

I’m currently researching companion planting and natural pest deterring/attracting as a means to keep the bad pests from eating my veggies.



Hubby and I took a trip to Lowes and a local nursery to pick up some plants for:

  • pest deterring – to ward off the bad ones
  • pest attacting – to attract the good ones that eat/scare off the bad ones
  • decoration – to make my garden look pretty

Ladies Lunch + Mahi Mahi

I was really looking forward to more granola and Greek yogurt this morning so I made a quick breakfast of one of the Stonyfield Chocolate Oikos samples (*), along with some of my Vanilla Almond Galaxy Granola sample (*).

So easy, so fast, so good! And good for you!


I girl-ified my biker jacket with a pretty silk scarf. This picture is terrible, but you get the point.


I actually had enough time to take a lunch break today…shocking I know! I got a half tea / half lemonade drink (no alcohol people).



I also got blackened mahi mahi with jambalaya and green beans – from Mimosa Grill. Lunch was fabulous and it was so nice escaping the office for once. For those new to TCL, I RARELY take lunch breaks at work. Most lunches are enjoyed at my desk while I chomp away on a phone conference with my mute button on. Glamorous, right? ;)


Hubby was really trying to spoil me today. He swung by with a sweet treat – one of my faves -a mini cinnamon roll from Great Harvest. Man these things are addicting!


For a pre-workout snack, I enjoyed a Raw Organic Food Bar in Chocolate Coconut (won these on Twitter).


These bars were the first product request I had fulfilled at my OpenSky shop and I’m thrilled to be able to offer them to you. These bars are fabulous but a little hard to find, but now it’s easy since you can find them in my shop!

(PS Some of you have asked about Galaxy Granola – I’ve requested to add that to my shop, too, so I hope it works out! I’ll keep you posted – the process can be a little slow)

Then I had a fabulous hour of ZUMBA! So fun. I love my mid-week workouts. I get to just dance all the stress of the week away!

Then, I came home to a REAL surprise. Hubby had dinner waiting for me!!!!! How sweet! First the cinnamon roll and then the dinner! I felt so lucky!


We started with salads – organic lettuce mix, orange bell pepper, and cucumber with Drew’s rosemary balsamic. Plus some $3 chuck to drink.



And for the main event – spaghetti!! I love spaghetti but haven’t had any in ages! I was really happy to see it tonight. Hubby even used whole wheat pasta!


On the side – SPELT toast, drizzled with EVOO, from Great Harvest! Hubby picked up a fresh loaf today when he got the cinnamon roll. I adore spelt-everything!


Do you ever just want a taste of something? I was really craving Galaxy Granola with vanilla almond milk after dinner, so I made a tee-niny bowl. I don’t think I’ll be using my Crate + Barrel spoon for oatmeal or soup any time soon, but I still think it’s the perfect ice cream spoon and I love it for my little tasting bowls. A regular sized spoon would have looked ridiculous! :lol:

Oh and about that Fitness challenge…I got sick and didn’t start it. :( Buuut, I think I will fore-go the monthly challenges and just start it up when I’m ready. Not sure I want to wait till May! lol

A year ago today I had a chicken burrito. Funny that I was craving one for lunch today since I rarely eat them for lunch. Also, I ordered my neon green zumba pants! Oh yea!

I can’t believe France isn’t in my top 10!! I’m only sad because I minored in French in college and France is the only country I’ve visited outside of the states (besides the Bahamas).




So as you guys know, I typically do bagels on Fridays for Bagel Day Friday. Since I’ve started trying extra hard to give whole grains a priority in my eats, I desire bagels less and less. I mean, I still think they’re tasty, but they definitely don’t keep me as full as long as whole grains.


My new fave is whole wheat roll egg sammies in lieu of bagel breakfast sandwiches.


Since I WFH today, I had time to cook up some eggs for breakfast for me and hubby, so I made some WW egg sliders with cheese and parsley. Plus 1/2 an organic orange on the side.


Plus part of a homemade granola bar.


I got started on Project Hydrate a little earlier than normal with some cold water.


Then, Fran reminded me that fresh citrus is delish in water, so I put a sliced orange in my next cup of water. I don’t think it was as good as lemon, lime (or cucumber – ok, that’s not citrus but it tastes good) would have been. Plus a yerba mate latte.


Bailey was lounging on the couch so oddly today.


He was laying on top of two pillows so he was like 4 inches off the couch. :lol:


More water!



I heated up some roasted tomato + black bean soup, which I had stowed away in the freezer. I heated the soup stovetop on a low heat while I was on a phone conference.


Mmm…CARBS! I love them! Do you avoid carbs?


Water is so much more fun to photograph with something in it.


The weather was pretty blah today. Gray skies galore.



I snacked on some Chic Energy Bites in Cheerful Cherry. They tasted like candy! I’m always surprised how sweet dates are!


A little later on I fueled up for zumba with another homemade granola bar and another Cheerful Cherry bite.




I was super stressed by the time the day was over, so I danced off my frustrations at ZUMBA! One fabulous hour of Zumba!

I stayed after class and played with choreography with some of the other instructors. I think we may have choreographed Bad Romance by Lady Gaga!!! I’ve been wanting do this song in class for months now and have been playing with some choreo and now I finally got around to showing someone the choreography I had. We made some tweaks and will probably change it some more, but I’m feeling optimistic. :D

Project Hydrate Day #5

After learning my lesson yesterday, I tried even harder to get my liquids in for Project Hydrate.


  • 6 cups water
  • 1 protein shake (made with about 1-1 1/2 cups of water)
  • 1 hot tea

So, I hit my goal today of 8 cups…however, I also worked out for an hour and boy was it HOT in there tonight! I sweat a lot. I think I should have had at least a glass or two of water to make up for the sweat, so technically, I think I only hit 6 cups. Doh! But, still, I’m going to call this a WIN for today because I still did better than I normally do. Win…yup! :)

I kicked off today with the last of our Great Harvest cinnamon swirl bread. I really think this stuff is pretty good for you since it’s whole grain. The sugar is the unhealthiest part.

I had a lot of stuff to take with me to work today: lunch, snacks, granola bars for my zumba friends (Kat, I gave Stacy yours – go to her class this week lady), WATER (hello Project Hydrate!), and I put a couple tea bags of my new Yerba Mate in a plastic baggie to keep at work.





I typically don’t do so hot drinking water in the morning. I seem to consume most of it after lunch but before 4pm. If I have hot tea in the morning, I do a lot better, but I could use some more H2O. So, this morning, I reminded myself to get started on my first bottle of water. I had twice as much water to drink than normal and I really wanted to spread my water consumption over the course of the day. I started with my new pink Gaiam water bottle.


The result of my AM water-guzzling? I downsized my Starbucks Monday. Instead of a grande, I got a tall vanilla soy latte. I was feeling pretty full from the water, so I figured a tall would be just enough. Saved myself some money and calories! (Not that I’m counting, but why consume something if you’re not trying to nourish yourself or at least satisfy an indulgence of sorts).

I was so full from the water and caffeinated from the Sbucks that I wasn’t feeling tea, even though I really wanted to try my new Yerba Mate. Now I have something to look forward to tomorrow, though!

By 11am I was halfway done with the first bottle of water.

I was SO GLAD I prepped food yesterday! I eat so much better (healthier, cheaper, and all around better) when I prep ahead. Lunch was a little light on the protein, but I had a snack to make up for it.



In the afternoon, I had a Chocolate Oikos with some homemade granola (from my oops granola bar crumbles). So tasty…so so good!

By around 3:30pm I had finished off my first bottle of water. Hooray! The bad part was that I typically don’t consume many liquids after 4pm. I seem to wake up in the middle of the night needing a bio break if I drink much after 4. Is it just me?



Zumba workout fuel = a homemade granola bar with dried cherries, dates, and currants plus Kashi crackers.


Double header zumba class! 2 sweet hours. And my hubby came to class tonight! He said he had fun and might come back. I hope he does. ;)

I worked on my second bottle of water during class, but only managed to finish about half the bottle.


Post workout sushi with a big glass of water. Even with this water, taking my workout into account, I don’t think I quite made my quota, but I did pretty good for Day #1.

No problem finishing my cup of water after 2 hours of zumba. Phew! Dinner hit the spot, plus I got to catch up with a girlfriend.

Project Hydrate Day #1 Comments

I knew Day #1 of Project Hydrate would be pretty hard for me. Sadly, I barely consume the water in this 3 cup water bottle. Now, I usually do have a mug of coffee in the AM, plus a cup or two or hot tea during the day, plus a little water at dinner (but not too much – see above), so I know I haven’t been getting enough liquids.


To illustrate, I’m attempting to go from drinking this…


…to drinking this.

I think the key will be reminding myself to spread my liquid consumption over the entire day instead of trying to chug it all in one sitting (which is simply not healthy – do not try this at home people!).


  • Pink bottle – finished off around 3pm
  • Turquoise bottle – finished half of bottle around 8:30pm
  • 1 large (probably 2 cups) of water consumed at dinner
  • No tea consumed
  • 2 cups coffee consumed but I did not count them towards the total

I don’t anticipate noticing many changes on Day #1, but I’d like to post some comments every day.


  • Drinking all the liquids I planned for was difficult, considering how little I was drinking before. I think I need to get started on liquid consumption earlier in the day.
  • Consuming more water than normal in the morning helped curb my Starbucks habit.
  • Looks like if I can drink my two mugs of tea and half a water bottle more, I’ll be meeting my planned intake.
