7:30 am – Coffee – Content (5)
I know I’ve been on a bit of a roll trying new coffees, but 1. I like to experiment 2. I like to have a couple flavors of coffee on hand at all times (and I used alllll of my coffee up to the last bag before trying those TJ’s coffees) and 3. I LOVE coffee!
Last night, hubby and I picked up some Fresh Market Spring Blend . I was almost swayed by the FM Spring Fling blend that was $2 off a bag of coffee, but I liked the flavors in this one much better. The Spring Blend is a mix of butterscotch and caramel…yum!
9:30 am – AB Chocolate-Chocolate-Chip Banana Oats – First Signs of Feeling Full (6)
I was going to have yogurt and granola for breakfast to switch things up, but then I realized I didn’t really have anything good to eat with my lunch sammy, so I decided to save the yogurt for a snack later in the day. Instead, I went with some regular ole old-fashioned oats – Almond Butter Chocolate-Chocolate Chip Banana Oats.
Pre-cooking:
- 1/4 cup old fashioned Fresh Market Oats
- 1/2 cup water
- 1 tsp flaxseed
- 1 tsp cocoa powder
Microwave for 1 minute
Post-cooking:
- a couple tbsp of 2% milk, stirred in
- 3/4 slightly-green, organic banana sliced and mixed in (I ate the other 1/4 while making my oats)
- 1 tbsp sliced almonds on top
- 1 tsp mini semi-sweet chocolate chips on top
This was my first time using slightly green bananas in my oats, and I’m not sure I liked the way it tasted. I like slightly green bananas to eat, but not so much in the oats. I still enjoyed breakfast, though.
12:45 pm – Turkey Sammy – Content (5)
I made a turkey sammy for lunch today, thanks to hubby sweetly picking up some Great Harvest Flax Oat Bran bread for us yesterday (they always seem to run out by the time I can go after work).
In the sandwich:
- oven-roasted turkey breast, shaved
- havarti cheese
- organic baby spinach
- TJ’s roasted red pepper hummus (so good!)
The hummus really made the sandwich! I knew I had the hummus in the fridge when we hit up Fresh Market, so I made sure to get a simple turkey meat (i.e. not honey-smoked) to let the hummus flavor take center stage. The sammy was sooo good – a very filling and refreshing meal!
4:30 pm – Wallaby Yogurt + FM Granola – Content (5)
Since I didn’t have the yogurt for breakfast, I had it ready and waiting for a late snack, which I promptly enjoyed after a phone conference. I had a Banana Vanilla Wallaby Organic yogurt with some Fresh Market Cherry Vanilla Granola (it was 40% off, too!)
9:30 pm – Leftover Pork Noodle Stir Fry + French Vanilla Pound Cake – First Signs of Feeling Full (6)
Hubby let me know that we are over budget for food already this month, so I made sure to use food around the house for dinner in an effort to be extra thrifty. We had some leftover roast pork tenderloin from the other night, so I cut that up along with some organic red onion.
We had some organic udon noodles in our pantry, too. I love having these around for pantry-leftover-style dinners! The udon noodles are wheat noodles, too!
I sauteed the red onions for a bit, then added the pork to warm through. Meanwhile, I cooked the udon noodles. When the noodles were done, I added some pasta water to the pork pan, then the noodles, then some more pasta water, then soy sauce, then organic baby spinach, which I wilted in.
The result was a big bowl of pork-noodle-stir-fry and it was delicious! I love simple dinners that use up leftovers and pantry items!
I topped the dish with some sesame seeds and enjoyed dinner with some water.
Next, it was dessert time! We also got some French Vanilla Pound Cake from the Fresh Market last night.
I had my pound cake with a wee bit of 2% milk.
The pound cake was super yummy – nice and moist! Yum! What a great way to end the day!

Congratulations on your achievement! I bought some zumba DVD's but haven't been able to try them out yet. I guess it burns a lot of calories though? I like your menu plans because you still eat dessert and lost weight at the same time.
Now, that is MY kind of meal plan!!
