7:30 am – Coffee + Whipped Cream – Content (5)
I enjoyed a cup of Fresh Market Spring Blend coffee this morning topped with whipped cream! Why, you ask? Why not!? It was gooood.
As much as I’m loving this Spring Blend coffee, I’m really missing my fave – Breakfast Blend ! I need to get more next time I’m at FM.
9:00 am – Starbucks Monday! – Content (5)
Today was Starbucks Monday so I got my usual – Grande Vanilla Soy Latte. It was delish, as always!
I was totally enjoying my latte when the morning escaped me. Next thing I know, I’ve figured out I have phone conferences from 11:30 – 5 so I have to have lunch at 11! I prefer later lunches (b/c it makes me feel like the day goes by faster), but 11 had to do. Although I don’t like to do it, I skipped breakfast!
11:15 am – Jersey Mikes Mini #7 – First Signs of Feeling Full (6)
I grabbed a mini #7 from Jersey Mike’s – Mike’s Way except banana peppers subbed for onions.
I also had a mini 1-ounce bag of Ruffles Cheddar & Sour Cream .
1:30 pm – Veggies + Hummus + Fruit Leather – Content (5)
I got a brief break this afternoon and grabbed some fresh veggies for refreshment – baby carrots, cucumber, and red pepper slices. I had a wee bit of TJ’s trio of hummus, but I wasn’t feeling the hummus so I only had a wee bit and ate most of the veggies raw.
I also had Target Archer Farms Tropical Real Fruit Strip, which my co-worker gave to sample.
4:00 pm – Luna LemonZest – Content (5)
A couple weeks ago, I gave a co-worker a Clif Kids ZBar to sample and she repayed me with a Luna LemonZest bar . Wasn’t that sweet!?
I’ll tell you what else was sweet…this bar was! The lemon flavor was refreshing…esp since most are chocolate or berry-flavored, it seems. The bottom had a frosting-y coating and the lemon flavor came through nice and strong. I really enjoyed it and it was a great pre-workout snack.
6:30 pm – Zumba! – Energized
Today was a long day of work…I had to read a document aloud for 2 hours over a phone conference, which left my voice super tired and me with a bit of a headache. The meeting turned out well and I got some great feedback, but I was feeling pretty tired and unmotivated towards the end of the day. I decided to head to zumba anyways and I was so glad I did! I had a lovely hour long zumba workout and felt sooo much better afterwards! Thank goodness I went!
9:30 pm – Fish, Veggies, and WW Toast – First Signs of Feeling Full (6)
Although I felt energized from zumba class, I still felt pretty tired overall from the long day. I wanted to make something quick and easy, and since I’m supposed to eat fish at least twice this week, I opted for some frozen fish sticks I recently got from TJ’s. Probably not the best fish option Ellie would have preferred, but hey, it’s fish, right?! I suppose the fish is technically called “Breaded Cod Fillets” according to the box, but fish sticks sounds more fun, so I’m sticking with that.
For a side, I also did a quick veggie medley of organic summer squash, organic yellow onion, and organic baby spinach sauteed in olive oil.
The fish sticks were oddly shaped. They didn’t look funny, but they were a little too small to be one serving and a little too large to be eat two per serving. I decided to do 1 fish stick and extra veggies.
I served the fish with the veggie medley, a piece of Great Harvest Flax Oat Bran buttered toast, and a wee bit of TJ’s tartar sauce. I also had water to drink. Oh, and a tiny piece of dark chocolate for dessert! Yum!
Reader Question: Have you already or do you plan to eat fish this week?
We try to eat fish at least once per week. I usually either make salmon or oven "fried" white fish like flounder or cod.
Love that whipped cream topped coffee! We're being served free DD coffee today at work, I'm more than excited!
I've never been too much of a fish fan but I recently tried salmon and can't get it off my mind!!! I am craving it like no other. YUM!

I have some left over salmon packed for my salad toppings today. It's one of those great left overs that totally works cold.
I am also a HUGE sashimi fan. I get it everytime I go for japanese because it's something I couldn't really replicate at home. Haven't had it so much lately since it's still been kind of cold up here.
LOVE the whipped cream. The Soy Latte is somewhat breakfast-y since it's full of Soy Milk protein. So you weren't totally off base on skipping breakfast!
