When I purchased the loaf of Great Harvest Cinnamon Chip bread, I knew it would be delicious toasted.
But I knew it would be even better as FRENCH TOAST!
With nearly half a loaf left today, I decided to make french toast with a twist – French Toast casserole! I based my recipe on this one found on allrecipes.com (click) except I used agave for the custard and organic cane sugar for the topping (which I used only 1/2 of on my version).
I also made sure to press the bread into the custard.

I also used earth balance for the margarine.
While my casserole baked, I made an apple syrup topping. I thought about putting apple INTO my casserole but decided it would be better as a topping.
Apple Topping directions: chop half an apple. Pre-heat a small pan over medium heat. Add apple and 1/2-3/4 cup maple syrup. Bring to a boil and simmer for 10 minutes. Use as topping for french toast casserole, french toast, or pancakes.
The casserole made my house smell so amazing while it was baking! Ooh, that cinnamon! It looked perfectly puffed up after 45 minutes.
Breakfast is served.
I also added some sliced almonds on top for some crunch.
So so good! Quite sweet, though! I wish I would have made some bacon or soysage to cut the sweetness, but at least I got some good protein with the eggs!

The french toast looks fabulous! I have a french toast casserole recipe which is super unhealthy but I like the modifications you've made to make it better for you.
