Oatmeal + Coconut Milk = Freakin Delicious!

I think I’ve discovered a new love to go with my oatmeal in addition to my new fave seed (hemp seeds!):

Oatmeal + Coconut Milk = Freakin Delicious!

I had some coconut milk leftover from my vegan Banana Cream Pancakes I made this weekend, so I figured, what the heck, why not throw it into my oats this morning?

I’ve used coconut milk to make a Filipino dessert (sweet rice!) that I absolutely love, so I knew I’d be a fan…I didn’t know how much!

I used about 1/2 coconut milk for liquid along with 1/2 regular milk. The coconut milk gave a nice tropical flavor to the bowl It was fabulous!

Pre-cooking ingredients:

  • 1/3 cup coconut milk
  • 1/3 cup skim milk
  • 1/3 cup extra thick oats
  • pinch flaxseed
  • 1/4 cup organic canned pumpkin

Cooked stove top for about 5 minutes

On top:

  • sliced almonds
  • drizzle of real maple syrup
  • organic unsweetened coconut flakes
  • hemp seeds (have you tried these yet? do it!)

I had more black tea with cream and sugar before lunch at work. Sooo good!

I had leftover 3, 2, 1 Veggie Noodles for lunch. Not only do I like tofu because it’s affordable and easy to prepare, but unlike meats (which IMO taste funny re-heated esp when microwaved) tofu tastes like it did the first time. Upon re-heating, tofu is a bit more soft, but I don’t mind it.

I was like a kid before Christmas the last hour of work because I was so excited about my secret project.

  1. Whoa…are you in my kitchen?

    I used coconut milk for the first time in my oats yesterday! But I used light milk, and didn't get much of the taste, so I'm going to use the real deal next time.
