TGIF! This week has been pretty tough schedule-wise!

I used up a ton of leftovers for today’s lunch:
Cilantro, lime, tomato, avocado…plus last night’s cous cous.
A little mixing later and I have a beautiful Tex-Mex-ish cous cous salad!
Light but tasty.
Plus half a mini bag of Food Should Taste Good (*) multigrain chips.
Plus a spinach salad with cranberries & pecans.

Did you know that today is National Doughnut Day! Thanks to The Cleaning Eating Mama who tweeted about it. You guys know me and my love of local doughnuts….hubby and I had to celebrate!
Hubby and I got a Texas doughnut. Don’t be fooled by the photo, this thing is HUGE!
Here’s my hand for scale. Hubby and I halved this (ok, maybe I had a couple bites of his half, too…hehe).

Post-work I had fun plans to do dinner with friends and…a very special guest!
We all met up at Brixx – a fabulous local pizza place.

And our special guest – Caitlin from Healthy Tipping Point and her hubby Kristien!
I ordered a beer sampler. I’m not very adventurous trying beer by the glass, but I love trying lots of little samples. I got the Star Hill Northern Lights IPA, the Spaten Lager, Victory Hopdevil Ale, and some pilsner that wasn’t on the menu.
They ran out of the cool sampler holders by the time they got to Matt’s, so he just got a plate! ๐
Hubby and I shared a Brixx salad, which they split for us.
We also shared bruschetta. Gosh the fresh basil on bruschetta gets me every time!
For the main event, hubby and I split a whole wheat crust pizza with half BBQ chicken and have chicken florentine. The BBQ is still my fave. SO tasty.

By the end of the night we were showing off our napkin folding skills. Here’s my “bird of paradise.”
Matt turned Emily’s fancy bowl holder into one of those little paper games that you probably remember doing when you were a kid.
Post dinner we hit up Ben & Jerry’s.

I normally get froyo when I’m at Ben & Jerry’s because it tastes pretty much just like the ice cream but has less fat/calories. Tonight, however a new flavor caught my attention – Boston Cream Pie. It was cream flavored ice cream with yellow cake and chocolate pieces.
I think the Half Baked in froyo form is still my fave but the BCP was pretty good, too.
