I slept in a little late today and my soon-to-be-stale loaf of bread was calling my name.
I have to admit, for days when I’m a bit on the late side, PB (or peanut butter) toast is a great go-to. Peanuts and wheat are one of the food combos that amp up nutrition that I blogged about awhile ago.
I usually pop my bread in the toaster while I make my coffee (getting the coffee pot set up is the FIRST thing I do in the AM – I could set it up at night, but…well…I just don’t). I usually get a couple sips of my cuppa joe before the toast is ready for a topping.
Todaty, I toasted up some Great Harvest Bread Company bread in Dakota.
On top, I added about 1 tbsp of Trader Joe’s Valencia Flaxseed Peanut Butter.
In the spirit of my Weekly Food Challenge, I added some black chia seeds on top. I really hardly tasted them OR noticed their added texture (prob b/c the peanut butter and bread were already a little on the nutty side). I should probably do this more often!

There really is nothing more easy, and might I say a bit comforting about melty peanut butter on hearty toast!! GH is my fav bread company! Great idea spinkling the chia seeds!
I wish there was a Great Harvest Bread Company up north here – I keep hearing great things about it from a couple of bloggers.
