Hubby and I enjoyed a nice breakfast this morning:
fried cage free egg and oven-toasted (broiled) Great Harvest honey whole wheat bread with real organic butter. I only use a tiny bit. I estimate it’s about 1/4 tbsp, so only 25 calories and worth every bit.
I’ve packed some stuff to take to my rents house: leftover arugula (it will be bad by the time we get home), tofu, leftover honey whole wheat bread, and whole wheat rolls.
I’ve packed some stuff so I can work on my crochet projects (vegging out w/ yarn is one of my fave parts of holidays).

my healthy Thanksgiving meal/great for turkey left overs!
Thanksgiving inspired salad
Start with a bed of lettuce/greens
Toppings
*dried cranberries
*chopped pecans
*fresh apple slices
*leftover turkey pieces
dressing
I made a cranberry vinagrette from http://www.thedailyrawcafe.com
Tangy Cranberry Balsamic Vinaigrette
(Yield: 1 cup )
3/4 cup olive oil
1/2 cup dried cranberries, soaked
1/4 cup balsamic vinegar
1/4 teaspoon sea salt
Combine balsamic vinegar, cranberries, and sea salt in a blender. Slowly stream in olive oil.
Drizzle on top of salad.
DELICIOUSNESS! and it hits the highlights of thanks giving (pecan pie, turkey, cranberries, apples) I would have also put pumpkin seeds in the salad but was out! Satifyingly Healthy thanksgiving!
