Good Morning! I think I’m currently enjoying the most perfect December Breakfast ever! Pumpkin oats and Gingerbread coffee.

Gingerbread coffee is the perfect accompaniment for breakfasts this time of year. The spiced and festive flavor makes me think of Christmas!
Ever tried pumpkin oats? If not, do you want to? They’re so easy! If you can make regular oats, you can make these! Just stir some canned pumpkin into your bowl pre-cooking. The flavor is light and subtle like a tea.
Pumpkin Coconut Oats
Pre-cooking ingredients (put in bowl and stir):
- 1/4 cup rolled oats
- 1/2 cup skim milk
- pinch flaxseed
- 1/4 cup canned pumpkin (I used organic)
Microwave for 1 min, stir, 1 min again
Post-cooking:
- pecans on top
- unsweetened coconut flakes
- drizzle of maple syrup (yup, this was my only sweetener)

Today is my company’s Food Day! So, I’m driving to my home office to see my co-workers and eat their yummy food. I’m going to be on phone conferences all day and won’t really be able to chat with any one, but I’m hoping to break away long enough to chat some during lunch.
