“Quick Recipes” Round-Up (30 Minutes & Under)

Whether you’re doing the Eat in Month challenge or not, I think we can all agree that “quick recipes” are great to have in your back pocket when you need good food fast. Here’s a recipe round-up of some fast recipes that take 30 minutes or less (broken down by category – links are under the related photo, if there’s a photo). Hopefully, you can find a couple recipes you like, make a grocery list, and either whip up some of these recipes this weekend or plan to use them next week.

Food Network Inspiration: Love her or hate her, I’ve made a few Rachael Ray 30 Minute Meals that I really enjoyed. Favorites include: her Salisbury Steak TV dinner, Pan-Seared Chicken with Tender Leek, and Parmesan Crusted Chicken Breasts with Tomato and Basil and Potatoes with Pepper and Onions.   1. The fastest meal I have in my back pocket is pita pizzas.
    I buy the Whole Foods whole grain large pitas for this.
    1. Preheat oven to low broil.
    2. Put pesto or pizza sauce on pita.
    3. Top with favorite ingredients (I tend to use shrimp and mushrooms and a little bit of mozzarella)
    4. Sprinkle with garlic salt and freshly ground pepper.
    5. Place under broiler until cheese bubbles/browns.
    6. Serve with a side salad.
