Hi friends! It’s been awhile since I’ve made a What I Eat in a Day video, and I’m really missing them. This time, I did a play by creating a Work Day in My Life about how I balance working three jobs. I don’t really feel like I work that many jobs. I feel like I have one job and then many interests. But I guess it depends on how you want to see it. Anywho, let’s jump in!

Quick and Healthy Breakfast
So, I forgot to take a photo of breakfast, but it’s in the video. I had Udi’s whole grain toast (2 slices) with sunbutter and chia seeds on top. Plus, raspberries on the side. This is great because it only takes about 3-5 minutes to put together.
While the sunbutter made it pretty filling, I did get hungry relatively early. This is part of why I think bread with nuts and seeds are better for filling power. But in a pinch, I love that the Udi’s bread stores in the freezer so I can have toast without having to worry about how I’m going to eat a whole loaf of bread in less than a week.
Btw, I’m not gluten-free. But the Udi’s is tasty and so darn convenient.
Lunch at the Office
For lunch, I stopped by the work cafeteria. I love when they have Mediterranean food day! It’s so good. For this office lunch, I had a stuffed pepper over bulgur wheat with roasted tomatoes, hummus, pita, and olives.
For many reasons, I’ve been reducing my meat consumption, so you’ll notice (if you haven’t already) that many of my meals are vegetarian or vegan. Like this one.

Blog Working Session
One amazing thing about San Francisco is that my fave coffee shop from NYC, Bluestone Lane, is also here!
You may recall all those flat white photos from my NYC days.
So, I try to squeeze in a quick blog working session. I usually don’t have time for any big projects, but I do try to do some Pinterest / Tailwind marketing to create new pins and share them a bit.
Sometimes I work on the email newsletters I send to you. And occasionally, I’ll put a little time into a blog post. But, it’s usually not enough time for video editing.
Teaching Zumba
I teach Zumba once a week, and I love it! My class participants are so fun, and I love seeing their smiling faces. And there are familiar faces every week!
This is definitely one way to stick to your work out schedule. Haha.
But seriously though, since I’m already at a gym, I like to add in a bit of toning and stretching. For this week, I was a bit tired, so instead of doing two sets of toning I compromised with my desire to do nothing by doing one. Fair, right?
Btw: I usually go straight from the office to the gym so I bring my change of clothes with me and my playlist already built.
Quick Veggie Noodle Soup Dinner
Since I get back pretty late after Zumba, I opt for super fast dinners, like this Veggie Noodle Soup. The slowest part is just getting the darn broth to boil! Depending on your stove, it can take forever. After that, it just takes a few minutes.
This recipe is great because it’s super flexible – you can basically use any vegetables you have on hand. Except cucumbers. That may not be quite as good in soup.

And for dessert I had a couple pieces of this delicious Loving Earth Creamy chocolate bar. It’s SO GOOD! I wish it was easier to get in the US.
This chocolate / nut mix box was available for a short time on Amazon. Since it seemed to sell well, let’s hope we’ll see it again. I just checked for you, and it’s not on Amazon for sale at the moment. We’ll see!
